Windy N Ranch is a labor of love for the Newhall family. We’ve been raising livestock on our little slice of heaven in Ellensburg, Washington in Kittitas County since 2006. Then in 2020, everything changed, and we found ourselves fighting the tide of exploding processing fees and exhausting wait times for appointments at the existing processing plants. We knew we had to do something crazy to stay viable and help our fellow meat producers overcome gaps in the local food chain that prevent hard working ranchers from making a living and getting good, clean food to their communities’ tables.

That’s when we decided to go all in and build a butcher shop on our property. We had the will and the space - we just needed the funds, equipment, building materials, manpower, elbow grease, concrete, hoists, refrigerators, hanging room, a butcher, knives…you know, all the things that make a butcher shop work. With guidance from mentors and a lot of hard work, we got our project off the ground and opened our shop in May 2021 with Bradley as the head butcher.

We have learned a lot since those beginning days, and have since expanded from WSDA custom exempt and FSIS certification to being a full blown USDA operation. We now proudly offer custom WSDA, USDA and wild game processing to ranchers and hunters in our community and beyond.
